vol. 3 | in the kitchen

Ok, the fact is, my life is far from perfect. Managing life with 3 children is hard! On this particular day, I was feeling overly stressed at all the “noise” and wanted just one quiet hour with my daughter in the kitchen. I sent my boys outside to play soccer and us girls got to work. Recently I have been more aware about what we have been putting in and on our bodies and I have been making a slow transition to a less toxic and more organic lifestyle. Does that mean we have completely cut out all processed foods and chemicals? No. But, little by little I want to get there. Snack foods are definitely one of our food downfalls. Store bought “granola” bars…so much junk loaded into a single snack. I decided to start with the granola bars, since we go through, well, A LOT of them each week. I found a bunch of recipes on Pinterest, but ultimately adapted this recipe to make these bars. We used coconut oil and added in a bunch of different nuts and seeds, shredded coconut, dried cranberries, chia and flax seeds, and of course some dark chocolate. In the end it was a learning experience (like don’t add in the chocolate until the mixture has cooled or else it will all melt!) Whoops, still delish anyway. So…here’s the play by play…

{set up} Cleaned a nice big glass bowl for mixing everything and got all of our ingredients set up. Since I was feeling a little frazzled on this particular day, I first added a few drops of Young Living essential oils to the dewdrop diffuser. I chose lavender and copaiba, both known for calming and improving your mood. It smelled divine!

{step one} Measured out the oats and spread out on the sheet to toast.

{step two} mix in the sweet binding syrup: a delicious mix of coconut oil, honey, maple syrup, brown sugar, vanilla bean and spices.

{step three} add in the mix-ins. We used: a bunch of different nuts and seeds, shredded coconut, dried cranberries, chia and flax seeds, and dark chocolate chunks. Note: let the mix cool before adding in the chocolate.

{step four} press mixture into parchment lined pan. We opted to drizzle with honey instead of more chocolate. Then place the pan in the fridge to set for about an hour…

{finished product} The truth is, this recipe made 10 bars and there were only 4 left later when I wanted to take pictures of the finished product, they were that good!! You can wrap them in a piece of parchment and keep them in the fridge for easy grabbing or for throwing in your purse or lunchbox.

{step five} continue to breathe in essential oil goodness.
